Indian cuisine is intriguing and diverse as its culture. While Hindus believe that cows are sacred and cook elaborate vegetarian dishes, Muslims do not eat pork and are strongly influenced by Persian and Arabic culture. Remnants of British and Portuguese cuisine are also evident in certain parts of India such as Goa - known for its subtly spicy meat and fish curries.

Rasam Soup

This traditional South indian recipe combines lentils, tomatoes and tamarind, in a superb dish.

How to prepare
Empty the contents into 1 litre (4 cups) of cold water.
Bring to the boil stirring occasionally
Cover and simmer for 15 minutes.

Cooking Tip! Add some chopped coriander and enjoy the soup with papadams or with steamed rice.
