seems that France is one huge garden. From the artichokes of Provence,
the cabbage of Alsace, to the endives of Flanders, it would be impossible
to exhaust the variety of vegetables France offers. Each region takes
loving care of the vegetables it grows and the recipes reflect this.

Classic
French Onion Soup

Always serve
this marvellous French country dish as a meal, lunch or dinner,
with lots of salad and crusty French bread.

How
to prepare
Empty the contents into 1 litre (4 cups) of cold water.
Bring to the boil stirring occasionally
Cover and simmer for 15 minutes.
Cooking Tip! Cover the soup with
a thick handful of Gruyere cheese. Top each with a piece of
oven-toasted french bread, which has been drizzled with olive
oil and sprinkled it with Parmesan cheese. |
